Disclaimer: I got this recipe from my cousin Britney who loves eating healthy foods just as much as I do!
I tried this for the first time, shared it with my room mates and they all loved it! I didn’t even have all the spices that the recipe required, but it still tasted amazing! Its also great for those have limited kitchen supplies, the only prep tools are a stove (you can even find a way to hard boil the eggs in a microwave) a pot, a bowl and a fork!
2 hard-boiled eggs
1/2 chopped up cucumber
splash of apple cider vinegar
salt and pepper
optional: add some sliced cucumber or tomato with more salt and pepper on top!
- Hard boil eggs
- In a mixing bowl, smash avocado and hard boiled eggs together
- Mix in chopped cucumbers, salt, pepper, cayenne and vinegar
- serve on toast of your choice (I did artisan bread)
(If you have a toaster, you can toast the bread and then add coconut oil instead of butter)
